For Kathleen. I remember being told this and as I understand alot of Spanish now, this is what guacamole was called
“Mantequilla de pobre” (translated as “poor-man’s butter”). It maybe Mantequilla de pobre but I love this….
Takes: 10 minutes
Ingredients
1 ripe avocados
1/4 red onion, chopped finely
1 hot chilli, remove the stems and seeds, chopped finely
1 Tbsp Coriander finely chopped
1 Tbsp of fresh lime or lemon juice
1/4 tsp coarse salt
Small pinch pf cracked pepper
1/5 ripe tomatos, chopped
Instructions
1 Remove seed and place avocado in half in a bowl. Remove seed.
2 Roughly mash the avocado. Add onion, cilantro, lime or lemon, salt and pepper and mash some more. Add chillies,
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
